Garlic Mustard Pork Roast

 4 lbs boneless pork loin
 2 tbsp minced garlic
 1 tbsp oregano
 2 tsp avocado oil
 1 tbsp dijon mustard
 ½ tsp salt
 ¼ tsp pepper

Preheat oven to 350 degrees.


Combine garlic, oregano, avocado oil, mustard, salt and pepper. Mix until blended into a paste.


Use your hand or a spoon to spread the mixture all over the pork.


Place pork roast in baking pan and roast uncovered for about 20 to 30 minutes per a pound. Internal temperature should be between 145 degrees F to 160 degrees F.


Remove from oven once temperature has been reached. Cover loosely with foil for about 10 minutes before slicing.
